It was just, in order of adding to the pan....
Red onion & garlic softened,
A red & yellow pepper cut into chunks & softened
3 medium tomatoes chopped & softened
1 sachet of
Amazon product ASIN B002K8VFE0Or some smoked paprika & saffron
paella rice (300 g) coated in the veg & cooked for a few minutes.
Hot Veg stock (1 litre)
Salt & pepper.
Cook an medium heat til rice done & water absorbed.
Red mullet
Prawns
Parsley
Lemon
I cooked the rice & veggies then when they were done cooked the fish skin side down til almost done, partially cooked the prawns then put them on the paella & covered with foil to finish cooking in the residual heat whilt I made the pan catalan.
Remove foil, sprinkle with parsley & serve with lemon & the bread.
The Spanish wouldn't call it paella mind.
